History:

The word "egusi" is derived from the Igbo language, where it refers to the edible seeds of certain cucurbitaceous plants.

Ingredients:

  • 3 Cups of Water or Stock 
  • ½ to 1 cup of grounded melon seed
  • ½ cup of shrimp or crayfish powder  
  • 1 Bunch of spinach or kale (washed and diced)
  • 1 medium onion (diced) 
  • ¼  cup of washed bitterleaf (fresh, frozen or dried) 
  • ½  cup dried 
  • ¼ cup of palm oil
  • Animal protein of choice  (optional for vegetarians and vegans – can substitute with tofu or mushrooms )
  • Seasoning cubes: 3  Maggi star cubes, 2 Knorr Cubes, 2 Jumbo cubes  or 2 Vegetable cubes 
  • Additional seasonings: 1 tablespoon of curry,1 teaspoon of thyme, salt as needed, and hot pepper (ground or chopped )

Instructions:

Preparing the Animal Protein

  1. Choose Your Protein: Select your preferred type of animal protein - options include chicken, beef, goat meat, or fish.

  2. Uniform Cutting: Cut the chosen protein into bite-sized pieces, ensuring they are uniform for even cooking.

  3. Creating the Base:

    • Place the cut protein into a deep cooking pot.
    • Add 3 cups of water or stock, providing a flavorful foundation for your soup.
  4. Seasoning for Flavor:

    • Season the protein with seasoning cubes, curry powder, thyme, a hot pepper (such as scotch bonnet or habanero) for heat, and bitter leaf for a distinctive flavor profile.
    • Adjust the quantity of seasoning to suit your taste preferences.
  5. Cooking for Tenderness:

    • Cover the pot and cook the protein over medium heat until it becomes tender.
    • Note: Cooking times may vary based on the type of protein chosen. Chicken typically cooks faster than beef or goat meat. Be patient and check periodically for doneness.
